The ice cream has low overrun - overrun is the amount of air that is pumped into ice cream - it's center is solid.

Ice cream truffles: the chocolate surrounding the ice cream acts like an insulator which helps keep ice cream cold for a longer preperation time.

Ice cream pies: fresh baked cake in our own bakery - the cake insulates the ice cream from melting in a warm serving dish.

Charl's ice cream pies are left plain specifically so that an establishment will have the flexibility to garnish any way they wish - the end result is a signature dessert which they have created.

Charl's spumoni wedge is a 50 year old recipe - the rum ice cream blended with maraschino cherries and almonds surrounded by chocolate and pistachio ice cream.
